2 avocados, diced
1 cucumber, sliced
1 cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
1-2 dozens of labaneh balls (buy here)
1 tbsp sumac (buy here)
1-2 heaping handfuls of walnut halves
To serve:
2 tbsp extra virgin olive oil (buy here)
2 tbsp lemon juice
2 tsp minced fresh oregano (or 1/2 tsp dried oregano)
1 tsp balsamic vinegar
Combine the avocados, cucumber, tomatoes, red onion, walnut halves, and labaneh balls in a large bowl and toss gently. Then, in a small bowl, whisk together the olive oil, lemon juice, and balsamic vinegar to create the dressing. Pour the dressing over the salad and toss. Add salt and pepper to taste, then sprinkle the sumac over the salad immediately before serving.
Recipe notes:
